Flying There are lots of small airfields dotted around Languedoc - marked on any map. Lezi Aviation - rent out planes for those who know how - but also take people up for guided tours over the cathare castles

Water sports: The more adventurous can embark on excursions on the rivers in Aude perfect for "wild water" sports at all levels, from spine-shivering white water rafting in kayaks through vast gorges to peaceful canoe excursions or fun pedalo trips.

Wine tasting: This is the world's largest wine-producing region. Vineyards dominate the Languedoc–Roussillon wine region stretches from below Perpignan in the South West to Arles in the Rhone . There are countless Domains with a good variety of wines offering wine tasting. Languedoc is now producing some excellent award winning vintages. Five main Appellations d’Origine Contrôlée around Carcassonne make up the rich variety of wines in this region, each with its own distinctive character. The wines of this area have been appreciated since the time of the Romans.The main types of wines grown here are: The Corbières The Minervois, Fitou, Limoux The Cabardès

Fishing: You can buy a license for around 50 euros which allows you to fish in any of the hundreds of rivers and streams, lakes and etangs (salt-water lakes) in the Aude. Best spots: Le lac de la Cavayère, Laprade, Le Lampy, Cennes-Monestiers, Arques, Jouarres, Saint-Ferréol, Montbel, Régembert, La Ganguise. There are some privately stocked fishing lakes in the area too. Catches from the calm waters of the Canal du Midi can include exceptional fish: carp, perch, pike, roach and sometimes even crayfish.
